Why aluminium beats stainless steel for outdoor kitchens in NZ

If you have shopped for an outdoor kitchen in New Zealand, you have probably seen stainless steel everywhere. It is the default. It is also not the right answer for most outdoor kitchens, and we want to be straight about why.

Forge Outdoor cabinets are made from marine-grade 6063-T5 extruded aluminium, with 18 mm panels and full seamless welding. Here is why we made that call.

Stainless steel rusts in coastal NZ. Aluminium does not.

Most stainless steel marketed for outdoor kitchens is grade 304. It is fine indoors. Outdoors, especially within a few kilometres of the coast, it tea-stains, pits, and eventually corrodes. The salt aerosol that drifts in off the Tasman, the Hauraki Gulf, or the Manukau is enough to attack it.

Aluminium does not rust. It forms a thin oxide layer on its surface that protects the metal underneath. That layer is self-healing. Scratch it, expose new aluminium to air, and the layer reforms. This is why aluminium has been used in marine applications for decades.

The 6063-T5 alloy we use is the same family of aluminium used in window joinery, marine fittings, and architectural cladding. It is built to live outside.

The honest trade-off

Aluminium is softer than stainless steel. If you drop a heavy cast iron pan on the corner of a Forge cabinet, it will dent. Stainless might not. We will not pretend otherwise.

What aluminium gives up in surface hardness, it more than makes up for in long-term durability. Cabinets that look right for ten years are worth more than cabinets that look right for one and rust for the next nine.

Why our benchtops are sintered stone, not stainless

Some outdoor kitchens use stainless steel benchtops. Heat marks them, scratches show easily, and they reflect glare in the sun.

Forge benchtops are 20 mm vein-cut sintered stone. Sintered stone is harder than granite, completely UV stable, and rated for direct heat. It does not stain from red wine, oil, or marinade. It does not need to be sealed. It is the same surface used on commercial laboratory benchtops.

The hardware matters

It does not matter how good the cabinetry is if the hinges fail. Every hinge, screw, and fixing on a Forge kitchen is stainless steel. The structure is aluminium because aluminium is the right choice. The hardware is stainless because stainless is the right choice for hardware that has to take repeated movement.

What this means for you

If you are planning an outdoor kitchen on the Auckland coast, in a humid Bay setting, or anywhere with weather, the cabinet material is one of the most consequential calls you will make. It determines whether the kitchen still looks right at year five and year ten.

We chose aluminium because we would not put a stainless steel outdoor kitchen in our own home. We will not sell you one either.
